Peanut Butter Chocolate Chip

I grew up baking cookies with my great-grandmother, both grandmothers and, most frequently, with my mother and sister. Baking is my passion, a tremendous source of relaxation and an activity I thrive on. My mom, sister and I love the combination of peanut butter and chocolate more than any other and have worked to perfect the most delicious cookie recipe with these two ingredients. I have baked the cookies countless times and they are consistently a favorite by friends, family and neighbors. Everyone wonders the secret (it's the honey and freezing the dough!) and I am glad to share it as it means more joyful baking for everyone else! I submit this recipe hoping that you, too, can enjoy these delicious cookies, created with much love.

Peanut Butter with Chocolate Chips Cookies

Ingredients:
1 cup chunky peanut butter (do not use freshly ground)
1/2 cup plus 2 tablespoons (packed) dark brown sugar
1/2 cup sugar
6 tablespoons (3/4 stick) unsalted butter, room temperature
2 tablespoons honey
1 large egg
2 teaspoons vanilla extract
1 cup all purpose flour
1/4 cup old-fashioned oats
1 teaspoon baking soda
3/4 cup roasted salted red-skinned Spanish peanuts
1 cup semi-sweet or dark chocolate, cut in chunks (or use 1 cup semi-sweet chocolate chips)

Preheat oven to 350 degrees F. Butter 2 large baking sheets. Using electric mixer, beat first 7 ingredients in large bowl until fluffy. Mix flour, oats and baking soda in small bowl. Add to peanut butter mixture beat to blend. Stir in nuts and chocolate. For each cookie, drop 2 heaping tablespoons of dough onto prepared sheet, pressing slightly. Freeze 15 minutes. Bake until cookies are light golden, about 12 minutes (don't overbake!). Note: turn cookie racks around and switch the bottom and top half-way through baking. Transfer to racks cool completely. ENJOY! :)
