Peanut Butter Suprise

Cream Together:
3/4 C Peanut Butter
1/2 C Crisco butter flavored shortening
1 1/4 C Brown Sugar(firmly packed)
1 Egg
Sift Together:
1 3/4 C Flour
3/4 tsp. Salt
3/4 tsp. Baking Soda
Also Needed:
3 Tblsp. Milk
1 Tblsp. Vanilla
1 Large Hershey's Special Dark Chocolate Bar (5oz)Broken into indivdual rectangles, then broken in half again to result in small squares of chocolate.

Preheat oven to 375 degrees. Mix milk and vanilla together. Add sifted mixture a little at a time, alternating with milk/vanilla liquid to creamed mixture. Continue until all ingredients are combined and a soft dough is formed. Wrap with plastic wrap, and chill 1/2 hour. Once chilled shape dough by rounded teaspoonfuls into balls. Using 2 dough balls per 1 chocolate square, flatten ball, put square in the middle, then flatten 2nd dough ball and put it on top. Flatten both sides together to sandwich the chocolate in the middle. Place on pan, then fork edges to seal. Place 2 inches apart on a pre-sprayed pan. Bake 11-12 minutes, or until cookies have cracks on top. Let cool before removing from pan. Makes about 28 cookies.

In my family it is just not a cookie without chocolate! This cookie started as a holiday cookie, because peanut butter was not one of the family favorites, so it wasn't requested alot. I began to put chocolate in the cookies in many different ways, but this way was the winner. By using the Hershey's squares, it allows you to sandwich the chocolate inside the cookie, so it can melt flat. Resulting in a bite of chocolate in every mouthful. These are melt in your mouth scrumptious. They have become one of the most requested cookie in my arsenal. ENJOY!
