Peanut Butter-Toffee Chip Cookies
PEANUT BUTTER-TOFFEE CHIP COOKIES
2-1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter, softened
1/2 cup creamy peanut butter (not old-fashioned style)
1 cup packed light brown sugar
1/2 cup packed dark brown sugar
2 teaspoons vanilla
3 large eggs
1 cup milk chocolate chips
1 cup peanut butter chips
1 cup toffee chips
Preheat oven to 325 degrees. Combine flour, baking soda and salt set aside. In large mixer bowl, combine butter, peanut butter, brown sugars and vanilla. Beat at medium speed until light and fluffy. Beat in eggs, one at a time, until well incorporated. Reduce mixer speed to low add flour mixture until blended. Stir in chips. Drop dough by rounded tablespoonfuls 2-inches apart on cookie sheets. Bake 12 to 1 6 minutes or until golden brown. Cool 2 minutes before removing from cookie sheets. Cool completely. Makes approx. 3-1/2 dozen cookies
MY COOKIE STORY: As a child, many of my summers were spent in the kitchen of my Grandma whose baking skills were legendary. She taught me many of the secrets to her famous cookies, cakes and pies. Baking with Grandma was a pastime I anxiously awaited and which developed my passion for baking-especially cookies.
Throughout the years, I experimented in my own kitchen to develop a variety of cookie flavors. My husband calls me the "cookie queen" as I am always creating new and what I hope are delicious cookie concoctions.
I now have a collection of family favorites and this particular cookie is one of my most loved. It is a luscious combination of two of my family's favorites peanut butter and chocolate chips. The end result being the best of both worlds. These peanut butter cookies oozing with creamy milk chocolate, peanut butter chips and buttery toffee bits. Irresistible!
