Sublime Lime-Coconut Cookies

1/2 c. butter
1/2 c. butter-flavored shortening
1 1/2 c. sugar
2 eggs
1/4 c. fresh lime juice
1/4 c. fresh lime zest
2 1/2 c. flour
1 tsp. baking soda
2 tsp. cream of tartar
1/4 tsp. salt
1 1/2 c. sweetened shredded coconut

Cream butter, shortening, and sugar. Add eggs 1 at a time until mixed. Add zest and juice to butter/sugar mixture. In a separate bowl, mix flour, baking soda, cream of tartar, and salt. Add this mixture slowly to the butter/sugar mixture. Mix until well-combined. Add coconut and stir thoroughly. Drop rounded spoonfuls onto a nonstick baking sheet or baking stone. Bake at 350 for 13-15 minutes. Cookies should be slightly firm to touch and very lightly browned on bottom. Do not overcook. Cookies will firm up after removal from oven.

Sublime Lime-Coconut Cookies were inspired by the Harry Nilsson song "Coconut." I heard the song on the radio while I was pregnant and being consumed by thoughts of food, quickly developed a craving for cookies with lime and coconut. On searching for a recipe with those ingredients in cookbooks and on the internet, I couldn't find anything that matched with how I envisioned the cookies would taste. So I decided to create my own. Sublime Lime-Coconut Cookies were born after my son, but they were worth the wait.
