The Maple Cinnamin Chip Cookie
I am a mother of three of which two of my children are autistic. As challenging as it may be, there is one common thread my older autsitic son (Jake) and I have, and that is the joy of baking. It is through baking that Jake and I can connect. He can express his creativity as well as relieve his anxiety. When I heard about this contest Jake and I both agreed that I need to submit my family favorite: the maple cinnamin chip cookie recipe.. It is with great pleasure that I will share with you our recipe this is what we enjoy most!
MAPLE CINNAMIN CHIP COOKIE
2 STICKS OF BUTTER
3/4 CUP GRANULATED SUGAR
3/4 CUP BROWN SUGAR
2 EGG YOLKS
1 TSP CINNAMIN
1 TSP MAPLE EXTRACT
2 1/4 CUPS ALL PURPOSE FLOUR (POSSIBLE MORE IF DESIRED)
1 TSP BAKING SODA
1/4 TSP SALT
1 BAG (11 OZ) CINNAMIN CHIPS
Preheat oven to 375 degrees. Cream butter with paddle attatchment until light and fluffy
add sugars, continue mixing. Gradually mix in egg yolks one at a time and then maple extract. In seperate bowl mix together dry ingredients. Slowly add dry ingredients to butter mixture. Fold in cinnamin chips. Place rounded tablespoons of dough on ungreased cookie sheet OR roll out cookie dough if necessary add more flour so that dough is thick enough to use circular cut out. Place cookies on ungreased cookie sheet. Bake for 9-11 minutes. ENJOY!!
