Vanilla Chip Gingersnaps

Vanilla Chip Gingersnaps

1 cup granulated sugar
1 cup light brown sugar
1 1/2 cups vegetable oil
2 large eggs, lightly beaten
1/2 cup dark molasses
4 cups all-purpose flour
4 teaspoons baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
1 tablespoon ground ginger
2 12 ounces packages vanilla chips

Preheat oven to 350 degrees. Combine sugar and oil in a mixing bowl mix well. Add the eggs beating well. Stir in the molasses and mix. Combine the flour, baking soda, salt, cinnamon and ginger in a separate bowl. Gradually blend the dry ingredients into the molasses mixture add the vanilla chips and mix until well blended. Shape the dough into balls the size of a walnut in a shell and place about 3 inches apart on ungreased cookie sheets. Bake at 350 degrees for 10 - 12 minutes or until firm. Remove fromoven and place on wire racks to cool.(You may make these cookies smaller if you like, it is a personal choice). Delicious small or large!

Do I love to bake? Yes, I do! So many people have told me how good I am but of course, sometimes people are polite! My daughters and friends remember how much I loved to bake for their school and church bake sales we often take a stroll down memory lane. I just love these cookies, they are absolutely delicious. For years I have tried so many types of ginger and gingersnap cookies that I decided to try my luck at my own, so here it is! You can be proud to put your name on this, yes you can! Sixty three years old am I and I would be honored! Thank you and happy baking!
