Vanilla Chip Gingersnaps

1 cup granulated sugar
1 cup light brown sugar
1 1/2 cups vegetable oil
2 large egss, slightly beaten
1/2 cup molasses
4 cups all-purpose flour
4 teaspoons baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
1 tablespoon ground ginger
2 12 ounce packages vanilla chips

Preheat oven to 350 degrees. Combine sugars and oil in a mixing bowl mix well. Add the slightly beaten four eggs beating well. Stir in the molasses and mix. Combine flour, baking soda, salt, cinnamon and ginger in a separate bowl. Next gradually blend the dry ingredients into the molasses mixture add the vanilla chips and mix until well blended. Shape the dough into balls the size of a walnut in a shell and place about 3 inches apart on ungreased cookie sheets. Bake at 350 degrees for 10 to 12 minutes or until firm and crinkled. Remove from oven and place on wire racks to cool.

These cookies can also be made smaller if you like, but I like the bigger! Do I love to bake, yes I do! For years, so many people have told me how good I am but of course, sometimes people are polite! My daughters and their friends remember how much I loved to bake for their school and church bake sales, we often take a stroll down memory lane. This is my favorite! Thank you and happy baking!
