White Chocolate Lemon Punch

I created this recipe out of desperation. I am a serious lover of lemon and I have never come across a REALLY good lemon cookie. I decided to take a Lemon Punch Cake recipe that has been handed down through my family and turn it into a cookie. These cookies are seriously the best cookies I have ever tasted. They please everyone from my 4 year old nephew to my grandmother.

White Chocolate Lemon Punch Cookies

Cookie Ingredients:
1 Cup Butter
1 1/2 Cups Sugar
1 Cup Brown Sugar
1 1/2 tsp Vanilla
2 Eggs
3 Cups Flour
1/2 tsp Baking Soda
1 tsp Salt
2 Cups White Chocolate Chips
2 T Lemon Gelatin
Ingredients for topping:
Zest of 2 Lemons
Juice of 2 Lemons
1/3 Cup Powdered Sugar

Preheat oven to 350 degrees. In a large bowl cream together butter & both types of sugar, until fluffy. Next beat in the eggs and the vanilla. In a separate bowl combine dry ingredients (flour, baking soda, salt, gelatin). Beat dry ingredients into sugar mixture a little at a time. When all of the dry ingredients have been combined with the sugar mixture stir in the white chocolate chips. Spoon mixture onto an ungreased cookie sheet (approx. 12/sheet). Zest the two lemons. Sprinkle this zest over the top of the cookies and then place them in the oven. Cook 9-12 minutes, until golden around the edges. While the first sheet of cookies are in the oven prepare the glaze. Combine juice of 2 lemons with powdered sugar. Whisk until smooth. When the cookies are finished allow to cool for a couple minutes then transfer to a wire rack. While the cookies are still warm brush them with the glaze. Allow them to cool and enjoy! TIPS: If you prefer a tarter cookie lessen the amount of powdered sugar in the glaze. If you prefer a crispier cookie lessen the amount of gelatin. Also, If you are preparing this recipe for children you can add yellow food coloring to the glaze to brighten up the cookie.
