White Chocolate Key Lime Coolers
All of my favorite tropical island flavors are bursting from these cookies. Tart lime, sweet coconut and just a hint of ginger heat are cooled with sweet white chocolate. These cookies are a tropical trip to paradise. I cannot think of a better way to celebrate Mrs. Fields' 30 years than with a vacation!
1/2 cup (1 stick) butter
1 cup sugar
1 egg
3/4 cup shredded coconut
1/4 cup key lime juice*
2 tablespoons key lime zest*
2 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground ginger
1 1/2 cups white chocolate chunks or chips
Preheat oven to 350 degrees. In a large bowl using an electric mixer, beat together the butter and the sugar. Stir in the egg and beat until combined. Add the coconut, lime juice and lime zest beating just until combined. Sift together the flour, the baking soda, salt and the ginger. Gradually add the flour mixture to the coconut mixture, beating until a soft dough forms. Stir in the white chocolate chunks. Drop the cookies by tablespoonfuls about 3 inches apart onto baking sheets. Bake cookies in the preheated oven for 7-9 minutes or until cookies are set and the edges are lightly golden. Yield: 2 1/2 dozen cookies. *Regular lime juice or lime zest may be substituted for the key limes
