White Cranberry Nut Drops
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
3/4 cup packed brown sugar
3/4 cup granulated sugar
1/2 cup butter, softened
1 teaspoon vanilla
2 large eggs
1 cup chopped white chocolate
1/2 cup dried cranberries
1/2 cup sliced almonds
Cooking spray
Preheat oven to 350 degrees. Combine flour, baking soda and salt. In a mixing bowl, combine sugars and butter and mix at medium speed. Add vanilla and eggs beat 1 minutes. Add flour mixture and beat until combined. Add chips, cranberries and almonds and mix until combined. Drop dough by tablespoon onto a cookie sheet coated with cooking spray. Bake at 350 degrees for 12 minutes or until lightly browned. Cool on pans for a few minutes before transfering to wire racks. Makes approximately 30 cookies.
I love to bake and am always trying to create new recipes. One of my family's holiday favorites are cranberry pistachios biscotti while chocolate chip is an everyday favorite. So, I tried to come up with something that combined some ingredients from each of the two favorite cookies. Now these are a favorite too.
